Spicy Paprika Lentils by Susie Ravasio
Susie Ravasio is warming up the cold evenings with spicy paprika lentils with veggies, feta cheese and smashed avocado.
Who doesn't love a one pot wonder for a busy week! This is the perfect dish if you’re after something to nourish the soul - warming and hearty and only pot to wash up - that's a winner in my book!

Green lentils are full of fibre and good quality protein, so this is a lovely filling dish that will satiate the hungriest of mouths. It's packed with lots of hidden veggies full of vitamins and minerals and the avocado adds a dose of heart healthy fats, folate and potassium. Don’t be scared by fat - it's good for you and essential as part of a healthy diet. The creaminess of the avocado works so nicely with the tanginess of feta and the smoked paprika gives the dish a warming, smokey flavour. Delicious!
To make:
You need 1 onion (finely chopped)
1 stick of celery (finely chopped)
1 clove of garlic
1tsp smoked paprika
1tsp cumin powder
Pinch of chilli (optional)
2 x 400g canned green lentils (drained)
200ml of water
1/2tsp vegetable stock
1 red pepper (finely chopped)
2 salad tomatoes (finely chopped)
To serve:
1/2 avocado
150g feta cheese
Handful of parsley to serve (all optional)
Saute the onion, celery and garlic for 8 mins, then add in the spices and the cans of lentils and stir for 1 minute, add in the diced pepper and tomatoes and cook for 12 mins. Once warmed through, serve into your favourite bowls, top with feta and avocado and serve!
